How was everyone’s Monday? Mine was fabulous up until my phone just vibrated telling me we have a Tornado Watch until 3am. I pray that thing expires before bed time or it’s going to be a long night. I’m more terrified of a tornado than juuuust about anything so if you need me later, I may be curled up in the bathtub with some pillows. Just sayin.
This morning’s breakfast was a delicious bowl of oats in a jar of peanut butter, topped with almond butter and raspberries. I had leftover pizza for lunch and totally forgot to take a picture. Whoops.
When I got home I started on dinner and then completed the following arms n abs circuit workout along with a 30 minute run on the treadmill. Having to figure out my own workout wasn’t as bad as I thought it would be but, I already miss Tina’s guidance!
Dinner tonight was sooo good! I made Courtney’s Ginger Chicken and Sweet Potato Bake for Matt and me, and again – delicious. I’ve made it before, and just like the first time it didn’t disappoint!
Now I’m going to go hang out with the weather channel! Hope everyone in the line of storms stays safe!

You should probably throw it back into the rotation – it is just SO good! When I’m too tired to think about what I want for dinner I usually head over to your recipe section! Thanks for all of the ideas!
