How’s everybody’s Wednesday going? Mine’s been super busy – no surprise there! Swamped at work is an understatement, but I somehow managed to visit 3 grocery stores on my lunch break and 2 after work. I always visit multiple stores to make sure I get the best deals. Anywhere I can save some money, I try – especially with all of this wedding planning! It’s starting to get very costly!
Rewind a little bit to last night’s dinner. I broiled some salmon, enjoyed with a side of sauteed zucchini and yellow squash. I also had some homemade healthier tarter sauce on the side. To make the tarter sauce I combined 1 cup of olive oil mayo with 1 1/2 tablespoons of sweet relish, 1 tablespoon of lemon juice and some salt and pepper to taste. It was seriously good – way better than any of the full fat stuff I’ve had in a restaurant!
Breakfast went unpictured but was an egg over easy with half a whole wheat English muffin. Lunch was a Morning Star Farms Chik-N patty on top of a whole wheat English muffin with olive oil mayo and pickles. I was a little nervous about these because it was my first experience with anything pretending to be meat but it was actually pretty tasty!
Before my second grocery shopping trip I snacked on a KIND bar. This is probably the best fruit and nut bar I’ve tried thus far.
For dinner Matt and I had spaghetti except instead of noodles we used spaghetti squash. Delish.
As you can probably tell, I’m really trying to get better at documenting my daily eats. It’s hard to do when you only blog once a day or less but, I need something to keep me accountable before my upcoming nuptials! Maybe I should make some time to blog twice a day on occasion? I just hate to blog ONLY about my food, kind of like I just did haha.
It’s almost time for the X Factor premiere! I can’t WAIT for Britney Spears! Time to channel my inner teeny bopper! See y’all later!

LOVE Spaghetti Squash. And it’s much easier than people realize! I saw on your blog where you poke it – maybe next time I’ll try that!
